Chicken Recipe


Fried Chicken

  •  1 chicken
  • 6 tablespoons lard or vegetable oil
  • 2 eggs
  •  6 tablespoons butter
  • Cracker crumbs
  • Salt and pepper

Disjoint fowl; wash in warm water, rinse in cold and wipe dry. Beat eggs thoroughly. Dip chicken in egg, then in fine cracker crumbs. Brown quickly on one side in very hot fat; season; turn; cover and let cook over a slow fire for an hour.
