Meatloaf Recipes


Two pounds of beef ground in a meat chopper. Add to this one-half cup of grated bread crumbs, two beaten eggs, a little onion, salt and pepper to taste. Roll into a loaf, cover the top with bits of butter and cook in oven for one and one- half hours. The juice of a can of tomatoes poured over the loaf while baking gives a delicious flavor.


  • 2 c. cooked meat
  • 2 cloves
  • 1 c. stock 
  • 1 tsp. celery salt
  • 1 tbsp. gelatin
  • Spk. salt
  • 1 tbsp. catsup
  • Spk. pepper
  • 1 bay leaf

Add seasonings to stock and bring to boiling point. Swell gelatin in cold water and dissolve in hot stock. Strain, add meat and mold. Serve garnished with hard-cooked egg.


Chop 1/2 pounds of round of beef, fine. Season with 2/3 teaspoon of salt, 1/3 tea.spoon of black pepper, a dash of thyme, and add a very thinly chopped shallot, a slightly beaten egg, and, if desired, 1 1/2 tablespoons of bread crumbs soaked in water, liquor pressed out. Arrange the thoroughly mixed preparation into a greased bread tin and bake about 50 minutes in a hot oven, reducing the oven heat as soon as the loaf is browned. Invert on a hot dish. Send separately a rich Brown or Spanish Sauce.
