Of course, you would be well advised to keep two bottles around if you are going to be using red wine in the kitchen, because it is vitally important to have some to enjoy from the glass once you have enjoyed your meal. Red wine is popular in sauces for the texture and the body that it adds to a meal. As a preference it should be used with caution, as the flavor can overpower a chicken dish in too large a quantity, but there is no limit beyond your own personal tastes in reality. Something that a lot of people enjoy in a meal is a good red wine vinegar.
Red wine vinegar is a real addition to any meal that contains good red meat. It has a rounding property that makes the dish taste very different and very moreish. One thing that it has very much in its advantage is that it is criminally easy to make yourself. All that you need is one part red wine and three parts white vinegar. It is important that the vinegar be white, as this has a lighter flavor and constitution and will mix well with the red wine rather than clashing with it. You yourself will know which is the best wine to use – whichever red wines you have drunk that feel like they would go well in a meal, those should be your preference.
The ideal wine for many in this respect is a good burgundy. Hugely popular within France and beyond, burgundy is a full-bodied red wine that really makes for a hearty meal or a hearty drink. If at the end of the night you have had a glass or two of a nice burgundy, do not race to finish the bottle – particularly if you have to work in the morning. Instead keep what is there and use it in the above Burgundy Red Wine Vinegar recipe. You will not be wasting anything – least of all your powers of recovery, and you will have the ideal base for a good meal in days to come. A popular use of red wine vinegar is in the Lyonnais dish of Chicken in Red Wine Vinegar.
There is very little that you will need to buy in order to make this meal.
Ingredients:
- Your pre made red wine vinegar,
- a tomato,
- some shallots,
- garlic
- and honey is all you will need,
- along with some chicken stock taken either from a previous roast or made from a stock cube.
Leaving aside the garlic and the shallots, you mix it all in a medium saucepan for eight minutes, after which it should have reduced nicely. You then cook your chicken in a large skillet with salt, pepper and butter until it is browned, remove from the pan and add the garlic and shallots. Cook these on a low heat for five minutes, then add the wine and boil until it reduces to about half its volume, then mix the chicken back in and cook for about 20 minutes. Then serve with whatever accompaniment you prefer and enjoy.

If you have ever wondered if your preferred Friday night tipple is doing more harm than good, recent discoveries in – of all places – the medical field have since revealed that drinking may actually be good for you. In particular; drinking wine and champagne.
The reason for this frankly marvellous news is a little known chemical, called resveratrol. This chemical is found predominantly in the skins of grapes, particularly red grapes, which is thus transmitted to any wine or champagne made from said grapes. It is particularly potent in red and rose wines, though recent discoveries have shown as effectiveness in white wines and the presence of champagne resveratrol.
Resveratrol is a photoalexin, and has been found to produce anti-cancer, anti-inflammatory effects as well as improving the life of the cardiovascular system. This link is not mere hearsay; synthetically produced resveratrol is now being marketed as a herbal supplement, predominantly from Japanese sources. But considering the choice of popping a pill or having a chilled glass of wine or champagne, most are achieving their intake of resveratrol in a far more enjoyable manner.
The scientific proof of resveratrol content in red wine has been going on for some years, while the study of the effects of white and champagne resveratrol is more in its infancy. The majority of the studies – particularly those linked to helping reduce cancer cells – have only been found during animal and mice studies, however, scientists are confident that this effect will easily be transferable to the human form. So confident, a study has since been commissioned to discover the effects of resveratrol on humans; currently, sufferers of melanoma and bowel cancer are being recruited. While there is little belief that resveratrol can cure cancer, it is thought to be able to significantly slow growth of damaged cells, buying time for more conventional treatments to work.
There is, however, an absolute scientific belief that resveratrol has an effect on some of the less serious maladies the human body is subjected to. A link between resveratrol and common bacteria has been found, with general belief suggesting that small, regular doses of the chemical (i.e. wine or champagne) can help the body fight bacterial infections. While the effects of this are only proven to be small, with a large amount needed in most cases to fully clear an infection, it is nevertheless a promising development which should at least aid prevention.
Resveratrol is, as mentioned, found predominantly in the skin of grapes; red grapes prove the most advantageous. Therefore, if you are looking to improve your intake of this possibly vitally important chemical, red or rose wines are best. The process needed to create champagne has no detrimental effects on resveratrol, so enjoy rose champagne wherever applicable. Considering the other health benefits associated with a glass of the red stuff, including improved cardiovascular function, a glass here and there may indeed prove to be better for you than a concoction of vitamins. If anything, its reason enough to have just one more during a night out, anyway.

Potato Salad Picnic Recipe
Potato Salad Recipe #1 —Cut up into slices two quarts of boiled potatoes while hot; add to them a teaspoonful each of chopped onion and parsley ; pour over them a liberal quantity of plain salad dressing. If the potatoes should then appear too dry, add a little hot water, or better still, soup stock ; toss lightly so as not to break the slices ; then place the salad on ice to become cold. Serve by placing a leaf of lettuce on each small plate, and add two tablespoonfuls of the potato to the lettuce, for each person. Cold boiled potatoes do not make a good potato salad.
Potato Salad Recipe #2 - Boil two eggs hard; take out yolks and rub to a pulp; add two raw eggs, two teaspoons vinegar, two of flour, two of oil, a little salt and pepper, two teaspoons mixed mustard, two tablespoons melted butter. Beat well together. Slice cold boiled potatoes thin, and pour over mixture. A little celery improves the whole.
Potato Salad Recipe #3 - Boil four potatoes; after they are cold, peel and slice them, and add to them one small onion, cut fine- Chop two bunches of celery, and the whites of three boiled eggs; mix the yolks with mustard, pepper, salt and vinegar, and add to the salad.
Potato Salad Recipe #4- In four tablespoonfuls of vinegar melt a piece of butter the size of an egg. Add to the warm mixture the beaten yolks of three eggs, one teaspoonful mustard, sugar and salt, and a little white pepper. Put into double boiler to thicken. Just before serving add a small teacupful of cream, and pour over salad made of six cold boiled potatoes sliced, one sliced cucumber, one grated small onion. Serve very cold.
